Ingredients
- 1 cup Otto’s Naturals - Cassava Flour
- 1 cup almond meal, cashew meal, or roasted pumpkin seed meal (make in food processor or buy)
- To make: pulse whole nuts/seeds in food processor for about 20 seconds until it makes a fairly fine meal.
- 1 Tablespoon Otto's Naturals Grain-Free Baking Powder (or sub 1 teaspoon baking soda + 1 teaspoon vinegar + 1 Tablespoon honey)
- 1/4 cup olive oil
- 2 Tablespoons honey
- 6 eggs
- 1/2 teaspoon salt
Directions
- Preheat oven to 350°F.
- Put wet ingredients in food processor (or high speed blender) and mix. Add dry ingredients slowly and blend well until creamy and color of batter turns significantly lighter.
- Pour into greased loaf 8 × 4-inch loaf pan and bake until nice and brown, approximately 45-50 mins or so, depending on your oven. Top should be nice and brown.
