InstaPot Pinto Beans (Red Beans) No Soaking

VERY GOOD! Beans were soo very tender!
AND… I pretty much used my standard Pinto Bean recipe and just dumped it all in the pot!

Ingredients
- 1 pound pinto beans, washed & sorted
- 3-4 slices bacon, cut into thin slices (or can use a ham hock or ham bone)
- 1 medium onion chopped
- 2-3 cloves of garlic, minced
- 1 can petite diced tomatoes
- 1-2 Tablespoons chili powder
- 1-2 Tablespoons Paprika
- 5 1/2 cups water + 2 chicken Boullion cubes
- Salt and black pepper to taste
Directions

Gather and prep all the ingredients.

Turn on the Instapot and Pre-Heat if you have that feature.

Add ALL THE INGREDIENTS and give them a quick stir. Close and lock the lid.

Select HIGH PRESSURE for 45 minutes. Slow release for about 15 minutes, then Quick Release.

Stir and taste for seasoning. (be careful it will be very hot)

Add Salt and Pepper to taste. Stir.

Set to High Pressure for another 30 minutes.

Turn Instapot off and just leave it be until you are ready to eat…then do a quick release.
