jicama salad

(from Joanna’s recipe box)

Ingredients

  • 1-2 large jicama (peel and cube or julliene)
  • 1 small red onion minced
  • 1 pt grape tomatoes (sliced in half if you like)
  • 5 oz baby arugula leaves (a big handful, also you might want to cut it small)
  • 2 avocados (cube or thin slices)
  • dressing
  • 1/2 tsp turmeric
  • 1/2 tsp cayenne (or less)
  • 1.5 TBS honey (or more)
  • 2 limes juiced (2-3 TBS!)
  • 2 TBS soy sauce
  • 1 TBS sesame oil
  • 2 TBS olive oil
  • sea salt
  • freshly ground pepper

Directions

  1. assemble (there are sophisticated ways but i wouldn’t bother)
