Reuben Chicken

Serves 6 people

Ingredients

  • 6 boneless skinless chicken breast halves
  • 1 cup Thousand Island salad dressing
  • 1 14-ounce can sauerkraut, rinsed and drained
  • 6 1-ounce slices Swiss cheese

Directions

  1. Preheat oven to 350-degrees. Pound chicken between two pieces of waxed paper to slightly flatten. Place in a 13 × 9 × 2-inch baking dish coated with a spray of canola oil. Brush salad dressing over chicken. Cover with sauerkraut. Cover and bake for 30 minutes. Uncover and top with cheese. Bake about 20 minutes longer or until chicken juices run clear and cheese is melted.
