You might need to buy:
  • chicken stock
  • peeled shrimp
  • coconut milk
  • Thai green curry paste
  • veg. oil
  • Thai fish sauce
  • chopped cilantro

Can be vegan or omnivore, depending on which broth is used.
Enhance by first toasting the whole cumin seeds in a dry skillet until aroma is released. Grind seeds with mortar and pestle, or use the bottom of a large spoon.

  • freshly ground peppercorns

  • toasted cumin seeds
  • turmeric
  • garlic minced
  • carrots
  • onions
  • red lentils rinsed
  • veg. or olive oil
  • freshly squeezed lemon juice
  • OPTIONAL
  • finely chopped cilantro or lemon slices as garnish

Not particularly fast if you cook from scratch, like I do.
We have used pepper jack, sharp cheddar, or mexican cheeses, and have experimented with seasonings, such as Smoky Paprika OR cumin and coriander. We have added roasted peppers or even hot sauce.
Save time with a store bought rotisserie chicken.
