Ethiopian Spicy Tomato Lentil Stew

Ingredients

  • 1 cup brown lentils
  • 1 lg yellow onion, diced small
  • 2 carrots peeled & diced
  • 4 cloves garlic
  • 2T fresh ginger
  • 10 plum tomatoes chopped
  • 1/2 cup tomato paste
  • 1 cup veg stock or one cup water & 2 cubes
  • 1 cup frozen green peas
  • Spices
  • 2t cumin
  • 2t paprika
  • 1t fenugreek (ground)
  • 1/2t dried thyme
  • 1/4t cardomon
  • 1/4t coriander
  • 1/8t allspice
  • 1/8t ground cloves
  • 1/8t cinnamon
  • 1/8t cayenne pepper
  • 1/2t salt

Directions

  1. Boil lentils in large pot – 45mins

  2. Saute onions & carrot – 10mins

  3. Add garlic ginger & spice blend, Saute 5mins

  4. add tomatoes – 5mins

  5. add tomato paste & mix

  6. add water/stock

  7. Simmer till bubbling

  8. add lentils and green peas, simmer 15mins

  9. Serve w rice, polenta or injera
