Apple and Rhubarb Crumble

Ingredients

  • 6 medium Granny Smith, peeled n cored
  • 300g rhubarb, cut 3cm lengths
  • 2/3 cup raw sugar
  • 2T cornflour
  • --TOPPING
  • 3/4 cup rolled oats
  • 1/2 cup raw sugar
  • 3/4 cup plain flour
  • 3/4 cup desiccated coconut
  • 120g butter, melted

Directions

  1. preheat oven to 190deg C

  2. thinly slice n chop apple

  3. mix apple, rhubarb, sugar and cornflour till evenly combined

  4. press into 5-6 cup ovenproof dish (pile fruit high as shrinks during cooking)

  5. mix topping ingredients with fork till well combined

  6. cover fruit completely & evenly

  7. bake 50-55min or till crumble is golden brown
