Chicken Breasts Florentine

Ingredients

  • 8 (6oz each) skinless boneless chicken breasts
  • 2 boxes (10oz each) frozen chopped spinach, thawed and squeezed dry
  • 1 lb fat-free ricotta cheese
  • 1/2 cup grated parmesan cheese
  • 1 tsp garlic powder
  • 1/4 tsp each salt & pepper, or to taste
  • 2 egg whites, beaten with 2 Tbsp water
  • 1 cup seasoned dried bread crumbs

Directions

  1. Preaheat oven to 375 F. Spray large shallow baking pan with nonstick spray.

  2. One at a time, place chicken breasts on flat surface and pound until 1/2" thick.

  3. In a medium bowl combine spinach, ricotta and parmesan cheeses, garlic powder, salt, and pepper.

  4. Dip breasts in beaten egg whites, then coat each with 2 Tbsp bread crumbs. Place in prepared baking pan; bake until chicken is cooked through and juices run clear when pierced.
