stuffed cabbage

Ingredients

  • -2 cups quinoa (uncooked)
  • -4 cups kale
  • -1 can chickpeas
  • -3/4 cup lemon juice (about 1 whole lemon)
  • -1/4 cup olive oil
  • -3 teaspoons of garlic or to taste (about 3 cloves)
  • -chipotle peppers to taste
  • -salt and pepper to taste
  • -tomato sauce
  • -Parmesan cheese to taste
  • -1 head of cabbage (or other dark green - kale, chard, etc.)

Directions

  1. mix the first set of ingredients together. set aside.

  2. -bring pot of water to boil

  3. -get bowl of ice water

  4. -place cabbage leaves 2-3 at a time into boiling water for 1 minute, then submerge in ice water

  5. -cut thick parts of spine off leaves so they are easier to bend

  6. -spoon filling into leaves, wrap, and place in casserole dish

  7. -pour tomato sauce over top

  8. -sprinkle with Parmesan cheese to taste

  9. -bake until warmed through and “cooked looking” on top – about 20 minutes
