Broccoli dipped in Wonderful Peanut Sauce

Ingredients

  • • 1 large bunch of broccoli (1 1/2 lbs)
  • Wonderful Peanut Sauce:
  • o 1 cup smooth peanut butter
  • o 3 Tablespoons light-colored honey
  • o 1 cup hot water
  • o 3 Tablespoons soy or tamari sauce
  • o 1 1/2 teaspoon minced or crushed garlic
  • o 2 teaspoon cider vinegar
  • o 3 Tablespoons finely minced cilantro
  • o Salt, to taste
  • o Cayenne pepper, to taste

Directions

  1. Bring a large pot of water to a boil In the meantime, trim and discard the tough stem end of the broccoli, and slice the rest lengthwise into about 6-8 hefty spears.

  2. When the water boils, lower the heat to a simmer, and plunge in the broccoli for 2 minutes if you like it tender-crisp, or 3 minutes if you like it tender-tender.

  3. Drain in colander, then put the broccoli under cold running water to cool it down. Drain thoroughly, and then dry the broccoli by first shaking it emphatically and then by patting it with paper towels. Transfer to a zip-style plastic bag, seal it, and store until use.

  4. SAUCE:

  5. Place the peanut butter and honey in a bowl. Add the hot water, and mash. Stir patiently with a spoon or a small whisk until uniformly blended.

  6. Stir the remaining ingredients, adding salt and cayenne to taste, and mix well. Serve right away, surrounded by steamed broccoli of any temperature. The sauce can be stored up to a week, tightly covered and refrigerated.
