Ham Hock Soup

Ingredients

  • 1 Leftover Ham WITH bone
  • 32oz container Chicken Stock
  • 2-3 Carrots
  • 1 Onion, large
  • 1 pkg Orange Lentils
  • 3 Yukon Gold Potatoes, small
  • Salt
  • Pepper
  • 1/4 cup Cajun Seasoning
  • Water

Directions

  1. In a dutch oven, crock pot, or large cooking vessel, add ham, chicken stock, and fill with water so that it is covered.

  2. Chop carrots in half and julienne (or shred). Cut onion to a rough chop. Add carrots and onion to pot.

  3. Clean lentils thoroughly to catch any stones and wash them off. Once clean, add to pot.

  4. Peel potatoes and cut into a smallish dice, add to pot.

  5. Season to taste.

  6. COOKING METHODS:

  7. If using a dutch oven, you can place pot, covered, in an oven pre-heated to 350F for 3-4 hours.

  8. If using an electric crock pot, set on low and cook for 6+ hours.

  9. If using stovetop, set on med-low and simmer covered for 6 hours.
