Salmon Oat Cakes

Ingredients

  • 1 can (14 oz) salmon, drained
  • 3/4 cup old fashioned oats, uncooked
  • 1/3 cup milk
  • 1 egg, lightly beaten
  • 2 Tbsp finely chopped onion
  • 1 Tbsp finely chopped fresh dill
  • 1/8 tsp salt
  • 1/2 cup plain yogurt
  • 1/3 cup finely chopped tomato
  • 1/3 cup finely chopped cucumber
  • 1 Tbsp finely chopped onion
  • 1 Tbsp finely chopped fresh dill

Directions

  1. Put yogurt, tomato, cucumber, onion, and dill in a small bowl and whisk together. Cover with plastic wrap and refrigerate.

  2. In a separate bowl, put salmon, oats, egg, onion, and dill and mix together well.

  3. Shape salmon mixture into patties.

  4. Drizzle a little olive oil into heavy skillet over medium heat.

  5. Cook salmon patties until golden brown, about 3 or 4 minutes.

  6. Drizzle sauce over salmon patties and serve hot
