Pinto Bean Fudge

Ingredients

  • 1 cup soft cooked pinto beans
  • 1/4 - 1/2 cup milk
  • 1 tbsp vanilla
  • 6oz unsweetened chocolate
  • 6 tbsp butter
  • 2 lb powdered sugar

Directions

  1. mash beans, milk and vanilla until consistency of mashed potatoes.

  2. heat chocolate and butter.

  3. pour hot chocolate mixture into beans and stir until slightly thickened.

  4. work in powdered sugar. knead with hands adding more powdered sugar if necessary until consistency of fudge.

  5. spread into buttered 9X13 pan.

  6. let refrigerate until hard. cut into small pieces.
