Stir Fry Cashew Pork

Ingredients

  • 2 teaspoons olive oil divided
  • 4 4oz boneless pork loin chops, 1/4” thick, cut in 1/2” wide strips (can use chicken)
  • 3/4 cup salted cashew nuts divided
  • 1 clove garlic
  • 1/2 teaspoon grated fresh gingerroot
  • 1 medium red bell pepper, seeded, deribbed and sliced medium thin strips
  • 2/3 cup low sodium chicken broth
  • 1 tablespoon parsley (I used dried)

Directions

  1. In a skillet, heat half of the olive oil over medium heat. Cook pork strips for about 6 minutes or until cooked through. Remove from skillet and keep warm. Meanwhile, using a food processor or blender, process or blend ½ cup of the cashews until finely ground; set aside. Add the remaining olive oil to skillet. Add the garlic, ginger root and red bell pepper; cook and stir for a minute. Stir in ground cashews. Slowly add chicken broth, stirring until well blended; add parsley. Serve sauce with pork. Sprinkle remaining cashews on each serving
