Smothered Pork Chops

Ingredients

  • 4 boneless pork chops
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 tablespoon arrowroot
  • 1 14.5-oz. can low sodium beef broth
  • 1 medium onion, sliced
  • 4 ounces fresh mushrooms, sliced

Directions

  1. Salt and pepper pork chops to taste and cook in olive oil in a large skillet over

  2. medium-high heat. While chops are cooking, combine arrowroot and beef broth. Remove cooked pork chops from

  3. skillet and set aside. Add onions and mushrooms to skillet and sauté till tender. Add broth mixture to the skillet

  4. and scrape up all the yummy browned bits from the bottom of the pan. Bring to a low boil. Stir well to blend

  5. flavors and simmer for a minute or two, till sauce thickens. Return pork chops to skillet; cover and simmer for

  6. another 5 minutes. Serve pork chops with onion/mushroom sauce.
