Banana Oat Pancakes

Variation: Use 1/4 cup +2 tablespoons of wheat berries instead of the flour. Grind berries in Vitamix dry blade container for 1 minute on High prior to using in recipe.

Ingredients

  • 1/2 cup (80 g) rolled oats
  • 1 3/4 cup (188 g) unbleached flour
  • 2 tablespoons (30 g) baking powder
  • 1 1/2 cups (360 ml) 2%, skim, soy milk
  • 1 teaspoon vanilla extract
  • 2 bananas, peeled, in chunks

Directions

  1. Place all ingredients, except bananas, into the Vitamix container in the order listed and secure lid.

  2. ct Variable 1.

  3. machine on and slowly increase speed to Variable 4 or 5.

  4. Blend for 10 seconds.

  5. Reduce speed to Variable 2 and remove the lid plug.

  6. Add bananas through the lid plug opening. Replace lid plug.

  7. Blend for 5-10 seconds until mixed.

  8. Note: Pour 1/4 cup (60 ml) batter onto hot, prepared griddle and bake.
