Ingredients

  • 2 cups sugar
  • 2 egg yolks
  • 2 egg whites
  • 2 cups butter (I used half unsalted butter and half salted butter or margarine.)
  • 4 cups flour
  • cinnamon as needed
  • pecan pieces as needed
  • extra sugar, as needed

Directions

  1. Cream butter and sugar well, add egg yolk and flour.

  2. I suggest using some Pam on the pans.

  3. Spread on two 13×9 inch square pans (I also used a 10×7 pan too), brush with egg whites that have been beaten until foamy (if I don’t have enough egg white sometimes will add extra whites).

  4. Sprinkle with pecans generously, very lightly press pecans down into dough, very lightly.

  5. Sprinkle generously with sugar and cinnamon.

  6. Bake until light golden brown, 10-15 minutes at 350 degrees. (You want it golden on the bottom, I have to bake longer in my oven.)

  7. TIP: I use glass clear Pyrex dishes so I can see how brown the crust/cookie is…will take longer than listed, at least on my oven it does.

  8. Cut while still hot…then cut again when cool.
