Poppy Seed Cake

(from cokerlj’s recipe box)

I guess many of the old time Czech’s would scoff at using a cake mix…but with the addition of the vanilla pudding it is such a moist cake!

Ingredients

  • 1 box Duncan Hines white cake mix
  • 4 eggs
  • 1 box instant vanilla pudding
  • 1/3 cup oil
  • 1 cup water
  • 1/2 cup poppy seeds ground

Directions

  1. Mix first four ingredients according to package directions.

  2. Measure 1/4 to 1/2 cup poppy seed and then grind. (It will almost double in volume when ground, if you don’t have a grinder you might try to grind in your blender…or just use the 1/2 cup poppy seed whole as is.) Add poppy seeds to batter.

  3. Bake in greased and floured tube pan according to package directions.

  4. Ice using a cream cheese type icing. (Cream cheese, milk, powdered sugar, vanilla, etc.)
