Old-Fashioned Cocoa Mint Cake

Ingredients

  • 2/3 cup margarine
  • 1 2/3 cup sugar
  • 3 eggs
  • 1/2 teaspoon vanilla
  • 2 cups flour sifted
  • 2/3 cup cocoa
  • 1 1/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1 teaspoon salt
  • 1 1/3 cup milk
  • 1/2 cup peppermint candy crushed

  • COCOA MINT FROSTING:
  • 1/2 cup margarine
  • 1/2 cup dry cocoa
  • 1 pound box powdered sugar
  • 7 tablespoons milk
  • 1 teaspoon vanilla
  • 1 tablespoon peppermint candy crushed

Directions

  1. Combine margarine, sugar, eggs and vanilla. Beat for 3 minutes on high speed of mixer.

  2. Combine flour, baking soda, baking powder, salt and cocoa. Add alternately with milk to creamed mixture.

  3. Blend just until combined. Add candy.

  4. Pour into two prepared 9 inch cake pans.

  5. Bake at 350 degrees for 30 to 35 minutes.

  6. Cool 10 minutes before removing from pans.

  7. COCOA MINT FROSTING: Melt margarine in pan; add cocoa. Heat one minute or until mixture is smooth, stirring constantly. Pour into small mixing bowl. Alternately add powdered sugar and milk; beat to spreading consistency. Blend in vanilla and crushed candy. Spread while warm.

  8. TIP: Decorate with additional crushed peppermint candy if desired.
