Pork Chops with Peachy Mustard Sauce

Ingredients

  • 4 4-ounce boneless center-cut pork loin chops (1/2 inch thick)
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • Cooking spray
  • 1/2 cup peach preserves
  • 2 tablespoons Dijon mustard
  • 1 tablespoon water

Directions

  1. Trim fat from chops. Sprinkle chops with salt and pepper.

  2. Coat a large nonstick skillet with cooking spray, and place over medium high heat until hot.

  3. Add chops to skillet; cook 1 minute on each side.

  4. Reduce heat to medium; cook 4 to 6 additional minutes on each side or until done.

  5. Remove chops from skillet, and keep warm.

  6. Add peach preserves, mustard, and water to skillet; cook, stirring constantly, 2 minutes. Spoon sauce over chops.
