Teriyaki-Ginger Pork Tenderloin

Ingredients

  • 1 pound pork tenderloin
  • Cooking spray
  • 1.5 tablespoons teriyaki sauce
  • 1.5 teaspoons cornstarch
  • 1/4 teaspoon ground ginger
  • 1 6-ounce can pineapple juice

Directions

  1. Trim fat from pork. Slice tenderloin into 1/2 inch thick slices; flattenslice with palm of hand.

  2. Coat a large nonsitck skillet with cooking spray; place over medium-high heat until hot.

  3. Add pork, anc cook 3 minutes on each side or until browned.

  4. Combine teriyaki sauce and remaining 3 ingredients, stirring well. Add pork in skillet.

  5. Bring to boil; reduce heat, and simmer 3 minutes.

  6. Remove pork from skillet, and spoon sauce over pork.
