Simple Spinach and Lentil Soup

Ingredients

  • 3 cups dried channa dal or yellow lentils
  • 1 (1" piece) ginger, peeled and grated
  • 2 cloves of garlic, peeled and grated
  • 1 tsp tomato paste
  • 1 tsp cumin seeds
  • 1 tsp ground coriander
  • 1 tsp garam masala
  • 1 tsp turmeric powder
  • 1 1/2 Tbs salt
  • 8 cups water
  • 4 cups spinach, coarsely chopped

Directions

  1. 1) Put the lentils, ginger, garlic, tomato paste, cumin, coriander, garam masala, turmeric, salt, and water in the slow cooker.

  2. 2) Cook on low for 6 hours, then add the spinach. Turn off the slow cooker and let sit for 15 minutes with the lid on. Serve as a soup or over brown or basmati rice.
