Grilled Chicken with Bourbon Peach Butter

Ingredients

  • 1.5 pounds chopped peeled peaches
  • 1/4 cup fresh lemon juice
  • 3 tablespoons water
  • 1/2 cup bourbon
  • 1/3 cup packed dark brown sugar
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 6 6-ounce chicken breasts

Directions

  1. eheat oven to 250.

  2. Combine first 3 ingredients in a saucepan. Bring to a boil; cover, reduce heat, and simmer 30 minutes.

  3. Combine peach mixture, bourbon, brown sugar, and 1/4 teaspoon salt in a food processor. Process until smooth.

  4. Transfer peach mixture to a baking dish and bake for 2 hours or until thickened.

  5. Preheat grill to medium high heat.

  6. Sprinkle remaining salt and pepper over chicken. Grill chicken. Cover with sauce.
