Low Fat Macaroni and Cheese

Ingredients

  • 1 cup fat free milk
  • 1 1/4 cups fat free cheddar cheese
  • 2/3 cup fat free cottage cheese
  • salt and pepper to taste
  • 2 1/2 cups cooked elbow macaroni
  • 1 tbs grated onion
  • Paprika to taste

Directions

  1. Preheat oven to 350 degrees.

  2. In a blender or food processor, combine the milk, cheeses and pepper. Cover and process until creamy. Pour into a bowl; stir in macaroni and onion.

  3. Transfer to a 1 1/2 qt. baking dish coated with non-stick spray. Sprinkle with paprika.

  4. Bake, uncovered, at 350 degrees for 1 hour or until heated through.
