Pork Rind French Toast Cakes

Ingredients

  • 1-1/2 oz pork rinds, crushed (approx 3/4 cup)
  • 2 tbsp flax meal or wheat germ
  • 2 eggs
  • 1/4 cup heavy cream
  • 2 tbsp water
  • 1/2 tsp vanilla
  • 3/4 tsp cinnamon

Directions

  1. Whish all ingredients together; let stand 2-3 min to thicken

  2. Make batter into 4 pancakes on hot griddle; brown well on both sides
