Banana Nut Muffins

Ingredients

  • 2 cups whole wheat flour or white whole wheat flour
  • 1 1/3 cup yogurt or 1 1/4 cup water +1 1/2 tablespoons vinegar
  • 2 eggs
  • 1/2 teaspoon real salt
  • 1/4 cup grade b maple syrup
  • 1 1/4 teaspoon baking soda
  • 2 1/2 tablespoon melted butter
  • 1 1/2 ripe bananas, well mashed
  • 1/3 cup pecans, chopped (preferable crispy nuts)

Directions

  1. Mix flour with water and vinegar and set on the counter for 12-24 hours.

  2. Stir in remaining ingredients (reserving half of the nuts).

  3. eheat oven to 325. Line or grease 12 muffin tins and spoon 1/4 cup batter into each tin. Sprinkle on nuts.

  4. Bake at 325 for 50-60 minutes, or until a toothpick inserted into the muffin comes out clean.
