Hide-And-Seek Hamburgers

Veggies in the burgers and they don’t know. Makes 16 mini-burgers.

Cook time: 15 minutes

Ingredients

  • 1 lb. ground chicken, turkey or sirloin
  • 1/2 cup finely chopped mushrooms
  • 1 cup grated carrots
  • 1 cup seasoned breadcrumbs
  • 1/4 cup grated zucchini
  • 1 Tablespoon soy sauce
  • 2 tablespoons ketchup
  • Salt and pepper to taste
  • Nonstick cooking spray
  • 1 tablespoon olive oil
  • 16 whole-grain mini buns for serving

Directions

  1. Preheat oven to 400 F

  2. In a large bowl, mix the meat, mushrooms, breadcrumbs, zucchini, soy sauce, ketchup, salt and pepper until well combines. Form into 16 patties and place them on a sheet of waxed paper.

  3. Coat a large nonstick ovenproof skillet with cooking spray and set it over medium-heat. When hot, add the oil. Add the burgers and brown them on one side for about 4 to 5 min. Turn them and slide the skillet into the oven. Bake them for 4 or 5 minutes longer, or until done. Serve.
