Swiss Chard and Turkey Soup

Ingredients

  • 1 cup diced onion
  • 1 tsp minced garlic
  • 8 oz cremini mushrooms, sliced
  • 1 lb gr turkey
  • 1/2 tsp salt
  • 1/4 tsp ground pepper
  • 4 cups chicken broth
  • 2 Tbs red wine vinegar
  • 2 tsps dried thyme
  • 1/4 tsp red pepper flakes, optional
  • 1 can navy beans, drained and rinsed
  • 1 bunch swiss chard, stemmed and chopped

Directions

  1. In a large soup pot, heat the olive oil over medium-high heat. Add the onions, garlic, mushrooms, turkey, s&p, and saute for 3-5 minutes until the turkey is cooked almost all the way through. Drain any excess fat. Add the broth, vinegar, thyme, red pepper flakes if using, beans and chard and increase the heat to a boil. Reduce the heat, cover and simmer for about 7 minutes until the chard is tender.
