Home-made Ice Cream

Ingredients

  • 5 eggs
  • 2 cups sugar
  • 2 large cans evaporated milk (not sweetened condensed milk)
  • 1 pint whipping cream
  • 2 tablespoons vanilla
  • milk as needed
  • 4 cups rock salt
  • 2 large bags ice

Directions

  1. Beat eggs and sugar together at high speed until very light and airy.

  2. Stir in canned milk, whipping cream and vanilla.

  3. Pour into freezer container, adding enough milk to fill up.

  4. Start electric freezer adding ice and incorporating two cups of rock salt.

  5. Run freezer until it almost stops. (You can hear the motor start to really work hard.)

  6. Unplug and pull out “ribs”.

  7. To pack the ice cream and freeze it harder, drain off as much water as you can and add more ice and the other two cups of rock salt.

  8. Cover, let stand until ready to serve.
