Thai Style Eggplant with Coconut Sauce

  • 1 large eggplant
  • 1 Tbs minced garlic
  • 2 Tbs soy sauce
  • 8 Tbs cilantro, divided
  • Juice of 1 lime
  • 1 can coconut milk
  • 1 jalapeƱo, minced (optional)
  • 1 Tbs grated fresh ginger
  • 3 Tbs peanut butter
  • 3 Tbs brown sugar


  1. Cut the eggplant into 1/2 inch strips, lengthwise. Score each side of the eggplant pieces in a criss cross pattern. Rub the garlic and soy sauce into the scored eggplant. Grill or broil until brown and pliable.

  2. Mix together the sauce, using half the cilantro.
