Eileen’s Chicken Nuggets

Serve with Ranch dressing as a dipping sauce or use your favorite dipping sauce.

Ingredients

  • 3 chicken breast halves, or equivilent of chicken tenders
  • 1 can Progresso Italian Bread Crumbs
  • 1 egg
  • 1 cup milk
  • Olive oil as needed (original recipe called for vegetable oil...I like olive oil and it is healthier)

Directions

  1. Combine milk and egg, mixing to form an “egg wash”.

  2. Cut chicken breasts or tenders into nuggett sized pieces or strips.

  3. Dip chicken into egg wash, then into bread crumbs. (You won’t need the whole can.)

  4. Place on ungreased cookie sheet with sides on pan.

  5. Drizzle oil around pieces of chicken nuggetts, try to avoid getting oil directly on breaded chicken.

  6. Place in 375 degree oven. Bake for about 15 minutes if oven is pre-heated.

  7. Remove from oven and turn over each piece of chicken. Return to oven for another 15 minutes.

  8. Remove and eat!
