Skillet Apple Chicken

Again…I have taken parts of several recipes and made it my own by adding what we like and taking away what we don’t…plus just doing my own thing!
It was darn good!

Ingredients

  • 4-6 chicken breasts, boneless, skinless, cut in strips or boneless, skinless chicken thighs cut up
  • 1 1/4 teaspoons olive oil
  • 1 apple, Granny Smith, in 1/2 inch wedges (any apple will do)
  • 1 cup chicken broth
  • 1 clove garlic, minced
  • 1 tablespoon minced parsley
  • 1/4 cup brown sugar
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons corn starch
  • 1 tablespoons worcestershire sauce
  • 1 tablespoon Dijon Mustard, I used a spicy brown mustard
  • salt and pepper, to taste (it didn't need any)

Directions

  1. Heat oil in large skillet. Add chicken and brown. Cooking until nicely browned.

  2. Add apple slices, sauté 3 minutes, stirring occasionally.

  3. Add chicken broth and garlic, reduce heat, cover and simmer 10 minutes or until chicken is cooked thru.

  4. Remove Chicken and apple slices. Place bowl or platter to keep warm

  5. Add brown sugar, apple cider vinegar, Worcester sauce and corn starch (dissolved in just a tad of water). Bring to a boil for about 5 minutes or until slightly thickened. (Didn’t take long!) Whisk in mustard, pour over chicken on platter or do as I did and just put the chicken and apples back into the skillet with the sauce and toss.
