Mother would make this every Christmas…it’s one of those recipes that you have to be sure the weather is clear with low humidity.

Ingredients

  • 2 1/8 cups sugar
  • 2/3 cup water
  • 2/3 cup white Karo
  • 3 egg whites stiff beaten
  • 1 cup pecan pieces
  • 1 teaspoon vanilla

Directions

  1. Cook sugar, water and Karo fast until it reaches hard crack stage on a candy thermometer. Be careful and don’t burn or start to caramelize the sugar, it should still be clear for a snow white candy.

  2. Pour very slowly into stiff beaten egg whites, mixing with a heavy duty mixer as you add syrup. Continue beating with heavy mixer or by hand until mixture looses its gloss.

  3. Stir in pecans, vanilla.

  4. Working very quickly, drop by teaspoon full onto wax paper which has been greased with margarine.
