Chicken Cordon Bleu Casserole

Ingredients

  • 1 lb chicken breasts, cubed
  • 3 tbsp butter
  • 1 bag frozen cauliflower
  • 1/2 cup chicken broth
  • 12 oz ham, diced
  • 1/2 cup onion
  • 1-1/4 cup heavy cream
  • 1 cup Parmesan cheese, divided
  • 1/2 cup sour cream
  • 3.5 oz shredded swiss cheese, divided
  • salt
  • pepper

Directions

  1. Preheat oven to 350F

  2. In a large skillet over medium-high heat, brown chicken in butter; once both sides are browned, add ham and onion

  3. Cook cauliflower in chicken broth until fork-tender; drain and then fork-mash the cauliflower

  4. a medium sauce pot, combine heavy cream, 1/2 cup Parmesan, sour cream, 1.5 oz swiss cheese, and salt and pepper to taste; bring to a boil then reduce heat to simmer 10 min, stirring frequently

  5. Combine cauliflower, meat mixture, and sauce and place in a 8×8 baking dish

  6. Top with remaining swiss and Parmesan cheeses; bake 25 min
