Creamed Cabbage

Ingredients

  • 1 medium head cabbage
  • salt & pepper to taste
  • water as needed
  • 3 tablespoons bacon drippings
  • 1 cup half & half OR 1/2 cup whipping cream
  • 2 tablespoon flour heaping

Directions

  1. Cut up cabbage into 1-2 inch pieces.

  2. Place in 2 quart pot. Season with salt, pepper and bacon drippings.

  3. Add water to about 2/3 way up. Simmer, with lid on, until just barely tender, do not overcook.

  4. Make a paste of flour and cream. If it is too thick, you can thin with milk or add more flour if too thin.

  5. Pour into cooked cabbage and return to a boil, simmer for a few minutes to thicken up.
