Lemon Dessert Delight

A distant cousin loves this and requests it for his “birthday cake”.

Ingredients

  • CRUST:
  • 1 cup flour
  • 1/2 cup margarine or butter
  • 1/2 cup pecans finely chopped
  • -
  • FILLING:
  • 8 ounce package cream cheese
  • 1 cup powdered sugar
  • 9 ounces whipped topping
  • 3 cups milk
  • 2 each 3 3/4 ounce packages instant lemon pudding

Directions

  1. CRUST: Mix together all the crust ingredients and pat into an ungreased 13×9 inch pan.

  2. Bake 15 minutes at 350 degrees. Do not brown. Let cool.

  3. FILLING: Cream together softened cream cheese and powdered sugar.

  4. Fold in 1 1/2 cups dessert topping and spread over cooled crust.

  5. Beat milk and instant pudding, mix together with mixer until thick. Spread over cheese mixture.

  6. Spread remaining dessert topping over all.

  7. Sprinkle with chopped nuts if desired and chill at least two hours before serving.
