Salmon Croquettes or Patties

  • 1 large can salmon drained
  • 1/4 cup onion finely minced
  • 8 saltine crackers crumbled
  • 1 egg
  • 1 heaping tablespoon mayonnaise
  • 1 teaspoon mustard
  • 1 tablespoon finely diced fresh parsley (optional)
  • Yellow cornmeal


  1. TIP: The bones and skin are FULL of calcium and will break apart as you mix. Leave them in the mixture.

  2. Mix all ingredients together except for the cornmeal.

  3. Form into patties. They will be messy and you think might not stick together…but they will, handle gently.

  4. Roll into cornmeal.

  5. Fry in a skillet until golden. I use a cast iron skillet. Put just enough oil to come about half way up the sides of the patty.

  6. Serve with Tarter Sauce, recipe also in this book.
