Creamed Wax Beans

Wonderful…the beans are so tender. Use fresh yellow wax beans.

Ingredients

  • 1 pan full of washed yellow waxed beans
  • 1/2 stick margarine
  • salt & pepper to taste
  • 1 cup whipping cream
  • 1 heaping tablespoon flour
  • water as needed

Directions

  1. Wash beans, cut off only the tips…leave whole. Garden fresh wax beans rarely have strings.

  2. Simmer in water seasoned with salt, pepper and margarine until tender. This won’t take long.

  3. Make a paste of flour and cream. If it is too thick, you can thin with milk or add more flour if too thin.

  4. Pour into cooked beans and return to a boil, simmer for a few minutes to thicken up.
