Czech Lima Beans with Prunes (“Trnky”)

Haven’t tried. (“Trnky” pronounced “turn-key”, roll the “r”)
A favorite in many Czech homes in Europe and US.

Ingredients

  • 1 pound large dry lima beans
  • 1 large ham hock
  • 2 to 3 cloves garlic, chopped
  • 1/2 cup chopped onion
  • 1 can chicken broth
  • 6 dried prunes
  • water as needed
  • salt & pepper to taste

Directions

  1. Cook ham hock until almost tender in small amount of water.

  2. Add limas and COLD water to cover.

  3. Bring to boil.

  4. Add garlic, onion and chicken broth. Season with salt & pepper to taste.

  5. Simmer, covered until beans are tender. Adding water/broth as necessary.

  6. Approximately 30 minutes before beans are done, add 6 prunes and finish cooking until beans are tender. The prunes add a hint of sweetness to the beans.
