Ingredients

  • 1 c self raising flour
  • 1/4 t baking soda
  • 1/4 c caster sugar
  • 1 egg, lightly beaten
  • 3/4 c milk
  • 30 g butter, melted, for brushing
  • For a savoury version swap sugar for grated Parmesan cheese

Directions

  1. Sift together flour and soda

  2. Stir in sugar

  3. Make a well in the centre

  4. Gradually stir in egg then milk to a smooth, pouring consistency

  5. Rest for 15 min

  6. Heat a large fry pan to medium

  7. Brush with butter

  8. Drop tablespoons of batter, 3 at a time

  9. Cook 1-2 min til bubbles appear

  10. Turn and cook 1 min

  11. Serve

  12. Can be frozen in reveal able bags for up to a month.
