Totsy’s Homemade Cheese

I haven’t made this but I’ve eaten this and I love it!

Ingredients

  • For ingredients read directions below.

Directions

  1. Put in a bowl 1 pound dried curd cottage cheese.

  2. Mix in caraway seed or cumin seed to taste.

  3. Keep covered with plastic on kitchen counter for 10 days.

  4. Each day stir it.

  5. On 11th day, stir in 1 teaspoon baking soda and mix to dissolve.

  6. Leave over night.

  7. Next day, put in buttered non-stick skillet. Get hot, stir in 1/2 cup whipping cream.

  8. Stir continuously, on medium fire, until all lumps are out and it becomes clear.

  9. Cook about 15 to 25 minutes.

  10. Pour into bowl.

  11. Keeps 3-4 days.

  12. INFORMATION: Bea said they called Totsy and asked for the cheese recipe. This is what Totsy told her and they have made it…only once…but it turned out perfect. Bea could not find the dried curd cottage cheese anywhere, but when she called the local diary they told her that they quit making it because there was no demand for it. They told her that you could use regular cottage cheese, just rinse it off with DISTILLED water so it would be dry. This is the main ingredient in Totsy’s cheese. Don’t use tap water as it contains chemicals and probably not work well for the cheese.
