No-Knead Cinnamon Rolls or Dinner Rolls

Haven’t tried but Edna is an excellent cook.

Ingredients

  • 1 package yeast
  • 1 teaspoon sugar
  • 1/2 cup warm water
  • 2 egg yolks
  • 1 whole egg
  • 1/2 cup melted butter
  • 1/3 cup more sugar
  • 1 cup warm milk
  • 4 1/2 cups flour, unsifted
  • 1 teaspoon salt

Directions

  1. Dissolve yeast and the 1 teaspoon sugar in warm water.

  2. Add remaining ingredients; mix well and let stand covered in refrigerator for at least 6 hours, or overnight.

  3. DO NOT KNEAD!

  4. About 2 hours before baking, roll dough to 3/4 inch thickness. Spread with soft butter and sprinkle with brown sugar and cinnamon.

  5. Roll like jelly roll and cut into 1 inch slices. Place on greased pans. Let rise.

  6. FOR DINNER ROLLS: You can place some dough into buttered muffin tins. Butter tops. Or you can put into a pan, free standing about 2 inches apart, butter tops. Let rise.

  7. Bake at 400 degrees for 10 to 12 minutes.

  8. The cinnamon rolls can be glazed and sprinkled with pecans.
