Kvosaky aka Quasaks (Czech Fermented Deli Style Pickles)

Haven’t tried this version.
There is another recipe in this book actually called Quasaks. This one is different.

Ingredients

  • Garlic
  • Dill
  • 1 gallon cucumbers
  • 8 cups warm water
  • 1/2 cup salt
  • 1/2 teaspoon baking yeast

Directions

  1. This recipe will make 1 gallon.

  2. Clean the cucumbers and stuff into a gallon jar. Also add the cloves of garlic and heads of dill. Be sure there are some bigger cucumbers that have seed pods…but not necessarily mature.

  3. (Totsy would mix in chunks of cabbage also.)

  4. Mix together the warm water, salt and yeast.

  5. Pour into the stuffed prepared jar.

  6. Cover loosely with lid.

  7. Put in warm spot for 4-5 days. Check for doneness “to taste”.

  8. Put in refrigerator when bubbles stop.

  9. Add enough equal parts water and vinegar to fill jar.

  10. Keep refrigerated.
