German Pecan Pie

(from cokerlj’s recipe box)

Very good, impressive, easy!
This is absolutely nothing like a traditional pecan pie. It has also been called “Surprise Pecan Pie” or “Wyatts Mystery Pecan Pie”.

Ingredients

  • 3 egg whites
  • 1 cup sugar
  • 1 cup pecans chopped
  • 1 teaspoon vanilla
  • 10 inch graham crust
  • Cool Whip

Directions

  1. Beat egg whites until foamy.

  2. Add sugar very gradually, beating continually until soft peaks form.

  3. Gently fold in pecans and vanilla.

  4. Pour into graham pie crust.

  5. Bake at 257 degrees…yes 275 degrees is not a typo…for 40 minutes.

  6. Cool for at least 2 hours at room temp before serving. This pie will be very puffy and tall, as it cools it will fall in on itself so don’t think you did anything wrong.

  7. Serve with a dollop of cool whip on each individual piece, don’t pile cool whip on the pie…just each piece as served.
