Nesselrode Pie

This was a very popular pie in the 1940-50’s. Mother made it special for Christmas. You don’t hear of it very often these days.

Ingredients

  • 1 4 ounce package vanilla pudding (not instant)
  • 1 1/2 cups milk
  • 1 cup heavy cream
  • 10 maraschino cherries finely chopped
  • 2 teaspoons cherry juice
  • 1/2 teaspoon rum extract
  • 1/2 cup pecans finely chopped
  • 1 9 inch baked pie crust (not graham)
  • 2 tablespoon bitter sweet chocolate grated

Directions

  1. Cook vanilla pudding as directed on back of package decreasing milk to 1 1/2 cup and chill.

  2. Whip 1 cup heavy cream and fold half into pudding…save remainder for top. Add cherries, rum flavoring, cherry juice and pecans.

  3. Turn into baked pie crust. Spread with remainder of whipped cream. Garnish with grated chocolate.

  4. Chill.
