Cucumber Salad

Ingredients

  • 2 medium garden fresh cucumbers
  • 1/2 sweet white onion
  • 1/2 cup white vinegar OR apple cider vinegar OR red wine vinegar (I like the apple cider vinegar.)
  • 1/4 cup sugar
  • 1 cup cold ice water
  • salt & pepper to taste

Directions

  1. Peel cucumbers. Take a fork and pull down the sides of the cucumber…this will make a pretty design when you cut into circles and also hold dressing. Cut cucumbers into 1/4 inch thick circles.

  2. Peel onion, cut in half. Slice into 1/4 inch thick semi-circles.

  3. Toss cucumbers and onion together.

  4. Combine other ingredients and pour over cucumbers and onion. You may have to adjust amounts of vinegar and sugar to your personal preference. Place in a plastic container with a lid so you can periodically shake. Chill a couple hours before serving.
