Joyce’s Egg Casserole

  • 1/2 pound of your favorite cheese grated and divided into two portions (Joyce uses a sharp cheddar.)
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon paprika
  • 1 teaspoon salt
  • 1 cup sour cream
  • 1 pound sausage cooked, drained, crumbled
  • 12 eggs beaten


  1. Spray 13×9 inch baking dish with Pam.

  2. Cover bottom of dish with half of the cheese.

  3. Mix mustard, paprika, salt and sour cream and pour half of that mixture over cheese.

  4. Cover with sausage.

  5. Beat eggs and pour over casserole.

  6. Spoon remaining sour cream mixture over this and top with the other half of the cheese.

  7. Bake at 325 degrees for 20-25 minutes.
