Creamy Chicken and Mushrooms

I made something very similar to this the other night…used flour and milk to make gravy rather than heavy cream.

Ingredients

  • 4 boneless, skinless chicken breast halves (about 1 pound)
  • 2 tablespoons butter/olive oil
  • 3 cups sliced fresh mushrooms (I used "Baby Bella" mushrooms for more flavor.)
  • 1 small onion, finely chopped
  • 1 clove garlic, minced
  • 2 cups whipping cream or heavy cream (instead of heavy cream, use a little oil, flour and milk to make a gravy type thickening)
  • 1/2 cup dijon mustard (not sure I would like this much mustard if any)
  • salt & pepper to tase

Directions

  1. Brown chicken – you may chose to cut chicken into chunks; remove from pan and set aside.

  2. In the same pan, cook and stir onion and garlic in butter/olive oil still in the pan.

  3. Stir in cream and mustard. (OR Stir in flour then whisk in milk.

  4. Simmer over medium heat until sauce thickens slightly, stirring constantly.

  5. Return chicken to pan, heat thoroughly making sure chicken is done. Toss in mushrooms towards the end. Taste and adjust salt & pepper.

  6. Serve over rice or mashed potatoes.
