Spinach Rice

Ingredients

  • 1 cup cooked Basmati rice
  • 8 oz frozen chopped spinach, or 2 cups chopped fresh spinach
  • 1 Tbsp oil
  • 1/8 tsp fenugreek seeds (Methi seeds)
  • 1/8 tsp mustard seeds
  • 1 dried red chili pepper
  • 1 tsp sambaar pudi or palia pudi
  • 4 curry leaves
  • 2 tbsp cashews
  • 1 tsp tamarind paste, or 2 tsp. lemon juice

Directions

  1. Cook spinach in microwave, squeeze out excess water.

  2. Make ogernai by heating oil over medium-high heat and adding mustard seeds, allow to pop. Add red chili, fenugreek seeds and curry leaves.

  3. Add spinach and tamarind paste and sambaar pudi or palia pudi

  4. Add salt to taste, 1-2 tsp.

  5. Once cooked through, blend spinach mixture with cooked rice.
