Standard Cream Pie (Vanilla, Chocolate, Coconut, Banana)

Ingredients

  • 3/4 cup sugar
  • 1/2 cup flour
  • 1/4 teaspoon salt
  • 2 cups milk
  • 3 well beaten egg yolks
  • 2 tablespoons butter or margarine
  • 1 teaspoon vanilla

Directions

  1. Combine sugar, flour and salt in sauce pan.

  2. Gradually stir in milk. Cook over very low heat until thickened, stirring occasionally.

  3. Slowly stir half the mixture into the beaten egg yolks…VERY slowly or you will have scrambled eggs.

  4. Beat the egg mixture into the remaining hot mixture.

  5. Cook 2 minutes.

  6. Remove from heat and add butter and vanilla. Stir until incorporated.

  7. Cool. Pour into cold baked pastry shell, top with meringue. Bake in oven 350 degrees for 12-15 minutes. Makes enough for one 9 inch pie.

  8. CHOCOLATE: Follow recipe above adding 2 one-ounce squares unsweetened chocolate, melted, to milk.

  9. COCONUT: Follow recipe above adding 1/2 cup coconut to cooked mixture; sprinkle coconut over meringue before baking.

  10. BANANA: Arrange slices of bananas on bottom of baked pastry shell. Cover with cream filling and top with banana slices.
